After you have seasoned the product, you should cover it with aplastic paper. It should then be safely kept in the refrigerator. It should not take less than 8 hours in the fridge and the main purpose of the process is to ensure that all the applied flavors penetrate inside the meat.

You should ensure that you use the right wood products when roasting. Too much smoke may overpower the meat. Use a temperature of at least 250 degrees. The baby back products cooks for 4 hours while the spare types of meat cooks for 5 hours. Once the meet boils for two and a half, hours, they should be wrapped in aluminum foils. They should be then cooked for the remaining hours.

The perfect time to add the additional flavor is during the wrapping period. You can add the apple juice, or grape juice to enhance the flavor. You can add other seasoning products at this time but it should be done with moderation. You can also apply the source during the last minute of the cooking. To apply it you should remove the meat form the heat, apply the source evenly and return it. It should then cooks for 15 minutes.
